Making the Dumpling Dough:

  1. In the mixing bowl with the marrow, add breadcrumbs, eggs, milk, chopped onion, chopped parsley, salt, pepper, and a pinch of nutmeg if desired.

  2. Mix all the ingredients together until well combined. The mixture should be thick and sticky. If it's too wet, add more breadcrumbs. If it's too dry, add a little more milk.

Shaping the Dumplings:

  1. Bring a large pot of salted water or broth to a gentle simmer.

  2. Lightly flour your hands and scoop out a portion of the dumpling mixture.

  3. Shape the mixture into balls, about the size of a golf ball, using your hands. If the mixture sticks to your hands, dust them with more flour.

  4. Place the shaped dumplings on a floured surface or a tray until ready to cook.

Cooking the Dumplings:

  1. Carefully drop the shaped dumplings into the simmering water or broth.

  2. Let the dumplings cook for about 10-15 minutes, or until they float to the surface and are cooked through.

  3. Once cooked, use a slotted spoon to remove the dumplings from the water or broth and transfer them to a serving dish.

Serving:

  1. Serve the Bone Marrow German Dumplings hot, accompanied by the broth or with a sauce of your choice.

  2. Add toasted bread.

  3. Optionally, garnish with additional chopped parsley before serving.
